3 Easy and Sweet Pumpkin Recipes

You guys, fall is officially HEREEEE! I’m seriously so stoked about entering this new season. Every season is a time of transition but there’s something about this one that feels a little different and better than before.

To kick off any season I usually purchase staple items to create some of my favorite dishes. In my opinion, there’s nothing that screams fall more than pumpkin. I’ve never been huge on pumpkin lattes (especially from Starbucks), because they’re sweeter than I prefer. So I started brainstorming healthy versions of pumpkin recipes with the ingredients I already had in my pantry.

Protein pancakes, overnight oats, and protein shakes are my favorite foods to eat before or after a workout. So why not put a pumpkin twist on them? Right? If you’re like me and have a sweet tooth like nobodies business then you won’t be disappointed!

  • 2 scoops of Orgain whey vanilla bean protein powder
  • 2 eggs
  • ½ tsp. pumpkin pie spice
  • ½ tsp. cinnamon
  • 1/8 tsp. baking powder

Mix all the ingredients together in one bowl until smooth. Spray your skillet/pan with olive or avocado oil spray. Pour into circles (however large or small your prefer) and let air bubbles appear before flipping to the other side.

  • 1/3 cup of oats (whole or rolled)
  • 2 tbsp. pumpkin puree (use 1 tbsp. if you want a milder pumpkin taste)
  • 1 tsp. sunflower seeds
  • 1 tsp. pumpkin seeds
  • 1 tsp. cranberries
  • 1 tbsp. chia seeds
  • ½ tsp. pumpkin pie spice
  • ¾ cup of unsweetened almond milk (sub for soy, coconut, or cow’s milk)
  • 3 drops of stevia vanilla

Pour all of the ingredients into a mason jar. Mix with a spoon then close the lid. To get flavor in each bite shake the jar with the lid closed. Let it sit overnight and enjoy in the morning!

  • 2 scoops of Orgain whey vanilla bean protein powder
  • 1 cup of unsweetened almond milk
  • 2 tbsp. pumpkin puree
  • ½ tsp. cinnamon
  • ½ tsp. pumpkin pie spice
  • 1/8 tsp. vanilla extract
  • ½ cup of ice

Place all the ingredients in a nutria-bullet cup or use a blender to mix. Turn it on high and voila!
